This is one volume of a wonderful set of twelve. The editors were a number of well-known cooking experts of their time, including James Beard and Helen Evans Brown. No canned this or packaged that as ingredients -- this means from scratch cooking that stands the test of time. The set has not only American recipes but also recipes and information on cuisine in many other cultures. Sections on specific ingredients are helpful, too, especially if you want to know what something is or how to perform a technique. It really is an encyclopedia!

My mother still has a set of these that she got as a new bride over 50 years ago. It has been one of her go-to cookbooks for many years. As I grew up and learned to cook, I, too, used it frequently learning a lot from the truly encyclopedic information in these volumes.

When I got married over 24 years ago, I was thrilled to find a set of these in a resale shop. My set has been used and well-loved, too.

If you love to cook and learn about cooking, collect the set. It's a keeper.
