I know this has been discussed before, but I can't remember the answer.  If I buy, say, 30 - $2.19 stamps at the APC, but don't use them all in one day, is this acceptable?  I am unsure because the stamps come out with a date on them.  Thanks.

The date on the APC postage is a purchase date, not a post mark.  And even though the PO's web site and the manual for the APCs state you can buy APC postage and use it at a later date not all POs are aware of this and so you could have a problem with it on occation.

I'm curious as to why you'd choose $2.19 as an amount?
