People who are not big meat eaters will love this book. Even if you are only a part time vegetarian there are some great recipes in this book. Great ideas for some well balanced and tasty meals.

This volume offers 130 mostly vegetarian, high-fiber, low-fat recipes for the growing number of parttime vegetarians. Highlights include Chunky Lentil Soup with Parmesan, Roasted Red Pepper Terrine, Sweet Potato Pancakes, Gnocchi with Sundried Tomatoes (and Chicken), Monkfish with Mushrooms and Beans, and Peach Scone Cake. Also includes menu suggestions, do-ahead tips, preparation times, and nutritional information.
