Baked Cod with Ginger and Green Onions

  • - oil for greasing
  • 1 pound - cod fillets
  • 1 tablespoon - light soy sauce
  • 1 tablespoon - rice wine or sherry
  • 1 teaspoon - sesame oil
  • - salt
  • 3 - green onions, shredded and cut into 1-inch pieces, white and green parts separated
  • 1 inch piece - fresh root ginger, finely chopped

1.  Preheat the oven to 375 degrees.  Line a shallow baking pan with a piece of greased foil to come past the sides of the baking pan.  Place the cod on the pan, skin side down.  Pour over the soy sauce, rice wine or sherry, oil and salt to taste, then sprinkle over with the white part of green onion and ginger.

2.  Loosely wrap the foil over the fish, folding the edges together to seal.  Bake for 20-25 minutes, until cooked through and tender.  Unwrap the parcel, transfer the fish to a serving plate and sprinkle over with remaining green onions.
