Ingredients
  • 3 1/2 cups - flour
  • 3 tsp. - baking powder
  • 1 tsp. - salt
  • 1 tsp. - baking soda
  • 2 cups - mashed, ripe bananas ( 4-6 bananas )
  • 2 tbsp. - lemon juice
  • 3/4 cup - shortening
  • 1 1/2 cup - sugar
  • 3 - eggs
  • 3/4 cups - milk
Directions
  • Heat your oven to 350 degrees.
  • Sift together flour, baking powder, salt and baking soda in a medium sized bowl.
  • In another medium sized bowl, mash bananas.
  • Add lemon juice to the mashed bananas and mix together.
  • In a large bowl, cream the sugar and shortening.
  • Add eggs to the creamed mixture and mix.
  • Add dry ingredients, alternately with milk, into sugar mixture.
  • Fold in bananas.
  • Pour into 2 greased loaf pans.
  • Bake for 1 hour or until done.

 

*****Makes 2 loaves.

 

**** Can add chopped walnuts ( or anything else you'd like ) at the "Fold in bananas" stage.
