Barbecue Beef Biscuit Cups (Serves 5)
Ingredients:
1-lb. Lean Ground Beef
1/4 cup Celery, chopped
1/4 cup Onion, chopped
1/4 cup Green Bell Pepper, chopped
1/2 cup prepared Barbecue Sauce
1/4 tsp. Salt
1/4 tsp. Black Pepper
12-oz. refrigerated Buttermilk Biscuit Dough
5 slices Sharp Cheddar Cheese, halved
Pre-heat oven to 400-F degrees.
In large non-stick skillet, brown ground beef, celery onion and
bell pepper over medium heat 6 minutes or until outside surface
of beef is no longer pink, crumbling the meat as it cooks.
Pour off any excess fat. Stir in barbecue sauce, salt and
pepper. Let the mixture simmer, uncovered for several minutes,
stirring occasionally.
Meanwhile place 1 biscuit dough slice into each well of 10
ungreased standard-sized muffin cups. Press dough firmly onto
bottoms and up sides of cups. Spoon about 1/4 cup of the beef
mixture into each biscuit cup.
Bake in 400 degree oven 10-12 minutes or until edges of biscuits
are golden brown. Place a cheese slice on the top of each beef
biscuit and continue baking until cheese is melted.
Let stand 1 minute, then loosen edges of biscuit cups before
removing from pan. Serve warm!
