in a skillet season beef with salt and pepper add 1 teaspoon of the butter and brown meat
put coked stew meat in a stew pot, set aside
in skillet add 2 teaspoons of butter and brown onions
add to the meat in the stew pot, set aside
in the skillet (not washed, all the left overs help flavor the sauce) add 3 tablespoons butter and melt over med heat slowly add flour and cook till golden, whisk in beer then the beef broth, bring to a boil and whisk till smooth
pour sauce over meat and onions and bring to a boil over med heat
reduce heat to simmer and cover pot, simmer for two hours
after two hours pull pot off heat and let it rest
meanwhile bring potatoes to a boil in a bot of salted water, when cooked to desired tenderness drain water, add remainder of butter and milk season with salt and pepper to taste, mash or beat till desired smoothness...
serve stew over mashed potatoes
this is lots of work but sooooo worth it
goes nice with some soft of loaf bread
