Beef Casserole With Cornbread
Serving Size: 6
1 pound ground beef, lean
1/4 cup onion -- chopped
1 clove garlic -- crushed
16 ounces tomato sauce
2 tablespoons chili powder
1 cup cheddar cheese, lowfat -- shredded
16 ounces pinto beans, canned -- undrained
6 ounce package unsweetened cornbread mix
Preheat oven to 400 degrees.
In a large skillet cook the ground beef, onion and garlic until
the meat is browned; drain. Stir in the tomato sauce and chili
powder. Pour mixture into a lightly grease 12x8x2-inch baking
dish. Top with cheese. Spoon the beans over the cheese.
Prepare the cornbread mix according to the package directions
and pour over the top of the casserole.
Bake for 25 minutes or until the cornbread is golden brown.
