Ingredients
  • 2 cup - Oat Bran
  • 1/4 cup - Cracked Wheat Cereal
  • 1 teaspoon - Baking Powder
  • 1 1/2 teaspoon - Baking Soda
  • 1/2 teaspoon - Cinnamon
  • 1/4 teaspoon - Nutmeg
  • 1/4 teaspoon - Ginger
  • 2 each - Egg whites, slightly beaten
  • 2 tablespoon - Plain non-fat yogurt
  • 1/4 teaspoon - Orange rind, grated
  • 1/2 cup - Honey
  • 3/4 cup - Non-fat milk
  • 1/4 cup - Cranberries, chopped
  • 1/4 cup - Carrots, grated
  • 1 teaspoon - Vanilla extract
  • 1 each - Ripe banana, mashed
Directions
  • Pre-heat oven to 375ºF
  • Combine all dry ingredients (first 7) in a large bowl
  • Combine all liquid ingredients and fruit/vegetables in a small bowl
  • Pour liquid mixture into dry mixture and blend gently
  • Insert paper cupcake cups or spray muffin pan with oil
  • Fill muffin cups 3/4 full
  • Bake muffins at 375ºF for 20 minutes until golden brown, or until a toothpick comes out clean

 


Notes
  • Overcooking the muffins will make them dry, making it difficult to fool your family and friends into thinking that they are not oat bran
  • Serve with "Weight Watchers" cream cheese substitute, low fat margarine, jam or honey, and fresh fruit salad
  • For less crunch, delete the cracked wheat cereal and use all oat bran
  • Substitutions for the fruit/vegetables include: grated apples, fresh blueberries, raisins (pre-soak in hot water to plump them up; using' dry raisins will make the muffins very dry), grated zucchini, etc.   
  • Makes about 16 muffins
