Combine all dry ingredients (first 7) in a large bowl
Combine all liquid ingredients and fruit/vegetables in a small bowl
Pour liquid mixture into dry mixture and blend gently
Insert paper cupcake cups or spray muffin pan with oil
Fill muffin cups 3/4 full
Bake muffins at 375ºF for 20 minutes until golden brown, or until a toothpick comes out clean
Notes
Overcooking the muffins will make them dry, making it difficult to fool your family and friends into thinking that they are not oat bran
Serve with "Weight Watchers" cream cheese substitute, low fat margarine, jam or honey, and fresh fruit salad
For less crunch, delete the cracked wheat cereal and use all oat bran
Substitutions for the fruit/vegetables include: grated apples, fresh blueberries, raisins (pre-soak in hot water to plump them up; using' dry raisins will make the muffins very dry), grated zucchini, etc.
