Berry-Marble Cobbler

  • 1/2 cup - granulated sugar (for batter)
  • 1 cup - all-purpose flour
  • 2 tsp - baking powder
  • 1/4 tsp - salt
  • 1/2 cup - milk
  • 1/2 tsp - vanilla
  • 1 Tbsp - melted butter
  • 1 cup - berries or fruit
  • 1/2 cup - granulated sugar (for topping)
  • 3/4 cup - water and/or berry juice

Pre-heat oven to 375 degrees.  Sift together first 4 ingredients.  Stir in milk, vanilla and melted butter.  Spread batter in buttered 10"x6"x2" baking dish.  Scatter berries or fruit over batter.  Sprinkle second 1/2 cup of sugar over fruit & batter.  Pour water/juice over all.  Bake until well-browned.  Serve with light cream, whipped cream, ice cream, or milk. 

Note:  If using frozen fruit, thaw and drain before measuring.  If canned fruit, drain liquid or syrup for topping, adding water as needed to make 3/4 cup.

If using peaches, sprinkle grated nutmeg over top of dish just before placing in oven.
