I made a few batches of bagels using the step-by-step process in this book, and my DH (who is from NY) said that the bagels were fantastic! (I thought they were darned good, too!) The process, however, is very time-consuming. Be prepared to spend a good chunk of time to get those hot, fresh bagels at home!
