Bette's Diner Buttemilk Pancakes
2 cups flour
2 talb. sugar
2 tsp. baking powder
1 tsp. baking soda
1/2 tsp. salt
2 eggs
2 cups buttermilk
1/2 cup milk
1/4 cup butter, melted
Mix all in bowl: combine dry in another bowl: combine wet add liquid to dry all at once. batter should be slightly lumpy and quite thick. let the batter rise for five to ten min.
heat griddle to 375
Pecan pancakes:
add melted two talb. butter in pan add 1/2 cup pecans, 2 talb. sugar and a few drops of lemon juice
Pigs in blanket:
roll pancakes around sausage. dust with powdered sugar and serve with warm apple currant topping
Banana upside down pancake: three bananas toss with two talb. sugar. add bananas on griddle then add batter on top.
Bacon breakfast cakes:
cook four slices of bacon until crisp then drain and add to batter- serve in stacks of two topping with fried eggs
Strawberry short stack:
toss one cup berries with one talb. sugar. place the berries on surface of the half cooked just before flipping.
sprinkle with conf. sugar and serve with whipped cream and additional berries
Note:
I usually dont take the time to let them rise first.
