Ingredients

2 - 15 oz cans black beans, rinsed and drained

6 oz - frozen corn, thawed

1 large - beefsteak tomato, seeded and finely diced

1 medium - green bell pepper, seeded and finely diced

1 tsp - chopped fresh cilantro leaves

1 clove - garlic, chopped

1 - jalapeno pepper, seeded and finely chopped

1 cup - tomato juice

1 medium - red onion, finely diced

Directions
Mix all together and refrigerate overnight.
