I am very interested in books about survival. Not how-to books, but about beating the odds. Here are a few that I know of.

Ice Bound : A Doctor's Incredible Battle for Survival at the South Pole By Jerri Nielsen, Maryanne Vollers

Between a Rock and a Hard Place By Aron Ralston

Touching the Void The True Story of One Man's Miraculous Survival By Joe Simpson

Angels in the Wilderness: The True Story of One Woman’s Survival Against All Odds By Amy Racina

Miracle in the Andes 72 Days on the Mountain and My Long Trek Home By Nando Parrado

Does anybody have any others they can think of?

There's a survival tag which has a couple of hundred titles tagged for it: http://www.paperbackswap.com/Survival/tag/34433/

Jon Krakauer has written several books about people in outdoor survival situations.

I enjoyed We Die Alone : A WWII Epic of Escape and Endurance.
