Borracho Bean Soup

  • 1 can - pinto beans w/jalapenos
  • 1 can - diced tomatoes w/green chilies
  • 1-2 cups - water
  • 1/2 tsp - cumin
  • to taste - salt
  • 3-4 slices - bacon
  • 1/4-1/2 cup - chopped fresh cilantro
  • 1-2 tbs - garlic, finely chopped

Cook bacon until crisp, chop.  If using fresh garlic, sweat in 1tbs olive oil until tender; if using prepared, skip this step.

Empty beans and tomatoes into a saucepan; add water until it is as juciy as you like.  Add all other incredients and heat until boiling.  Let simmer 3-4 minutes.  Serve.




This will be slightly spicy...can be attenuated by using beans without jalapenos, or using diced tomatoes without green chilies.  Avoid using plain beans and plain will be too bland!!!  The cilantro is critical...parsley could be used, but cilantro is much better.
