Braised Steak with Mushrooms
1 1/2 lbs round steak, cut into serving sized pieces.
1/4 cup all-purpose flour
1/2 tsp salt
1/4 tsp pepper
2 Tbsp butter or margarine
1 tbsp vegetable oil
1 clove garlic, minced ( I always use more )
1 large onion, sliced
1/2 cup dry red wine
1/4 lb fresh mushrooms, sliced or chopped
Pound meat to flatten to 1/4 to 1/2 inch thickness.
Combine flour, salt and pepper. Coat steaks on both sides
heavily with the mixture.
Heat 1 tbsp butter. Saute mushrooms. Remove and set aside.
Heat oil in heavy skillet. Add the garlic and remaining butter.
Add the steaks. Brown on both sides over medium heat.
Add the onions and wine and mushrooms. Turn the heat to low.
Simmer 45 minutes to 1 hour or until meat is very tender. Remove
meat from pan.
Stir the juices in the pan until blended. Serve steaks with
mushrooms and onion on top and pan juices spooned over.
