Broccoli/Bacon Salad - Low Sodium

  • 2-4 slices - fresh side pork
  • dash - Cavender's All Purpose Salt Free Greek Seasoning
  • 1 head - broccoli florets
  • 2/3 c. - Natural Shredded Swiss Cheese, such as Kraft (60 mg Sodium/ 1/4 c.)
  • 1/3 c. - raisins
  • 1/3 c. - sunflower seeds - un-salted and hulled
  • 1 small - red onion, chopped
  • 2/3 c. - mayonnaise, such as Hellmann's or Kraft (75-90 mg Sodium/T.)
  • 2 T. - sugar or equivalent of your sugar substitute

Fry side pork and lightly season with Cavender's All Purpose Salt Free Greek Seasoning, 'til crisp. Drain, crumble and set aside to cool. Mix together the broccoli, Swiss Cheese, raisins, onion, sunflower seeds and crumbled side pork. Stir in mayonnaise and sugar, tossing well to coat. Cover and refrigerate until chilled. Serve cold.


I adapted this popular deli recipe for my husband's low sodium requirements, due to his heart failure condition.
