Preheat oven to 350. Place liners in cupcake pan. Place one nilla wafer in each liner. This serves as the crust.
Mix together: cream cheese, sugar, lemon juice, vanilla and eggs until smooth. Fill each cupcake tin about half way with cream cheese mixture. Bake for 11-13 minutes. Cool in fridge. Top each cheesecake with a spoonful of pie filling. Serve! Store in fridge.
Cherry and blueberry pie filling are my favorites, but any flavors can be used. Or, omit the pie filling if you prefer. This is a quick, easy and very tasty dessert. It's perfect for the holidays!
