3C.DICED ,COOKED,CHICKEN BREASTS,1C.PEAS,1C.DICED FRESH  CARROTS,1C.DICED COOKED POTATO,1C.MAYONNAISE,1/4C.JALAPENO SLICES,SALT TO TASTE,1/2C.ONION,CHOPPED. BOIL CHICKEN WITH 1/2C.ONION AND SALT TO TASTE.AFTER BOILED,DICE THE CHICKEN FOR SALAD; ADD THE REST INGREDIENTS,SET ASIDE. TAKE 2 LOAVES OF BREAD, CUT OFF CRUST;HEAVILY BUTTER THE CUP MUFFIN PAN AND PRESS THE SLICE OF BREAD INTO EACH CUP,FILL WITH CHICKEN SALAD AND PLACE IT IN THE OVEN TILL GOLDEN BROWN, OVEN AT 350 FOR 15-20MINS.
