Carrot Bread

  • 2 1/2 cups - all-purpose flour
  • 2 tbs. - baking powder
  • 1 tbs. - sugar
  • 1 tsp. - salt
  • 1 large - egg
  • 4 tbs. - olive oil
  • 3/4 cup - milk
  • 2 cups - finely grated carrots

Preheat oven to 350 degrees.  Place the grated carrots on layers of paper towels to absorb excess liquid.

Sift the flour with the baking powder in a large bowl. Stir in the sugar and salt. Fold in carrots and set aside.

Beat egg with oil and milk.  Add egg mix to flour mix and stir to form a stiff batter.  Spoon into an 8 1/2" x 4 1/2" loaf pan and bake for about an hour, until a tester comes out clean.  Cool on wire rack.


This is not a sweet bread.  Good for making sandwiches, or to serve with soup.
