Ingredients
  • - 1 pound cooked & drained baby carrots or 1" pieces
  • - 1 teaspoon Baking Powder
  • - 3 Eggs
  • - 4 Tablespoons Melted butter or margarine (1/2 stick)
  • - 3 Tablespoons Flour
  • - 3/4 Cup Sugar
  • - 1 teaspoon Vanilla
Directions

In a blender, mix margarine, eggs and vanilla.

Blend in flour, sugar and baking powder.

Gradually blend in carrots until mixture is completely smooth. Blends better if carrots are cooked until soft.

Put in a greased 8" square or 9" round pan.

Bake at 350 degrees for 45 minutes.

Let cool for 5 minutes and serve! Puff will "fall" slightly after cooling.

Recipe can be doubled and baked in a 2 1/2 quart greased cassarole dish. Bake time will be longer. Test with a knife blade - cook until blade comes out fairly clean.


Notes

This puff is so good, kids love it and everyone thinks it should be a dessert!!
