Cover the bottom of a cassarole dish with THIN slices of onions (if your slices are too thick they won't cook as well.) Place on top of the onions - chicken that has been rinsed, patted dry and seasoned (go easy on the salt but feel free to go wild with the garlic!)Place on top of the chicken/onion combo - whole slices of UNCOOKED bacon - you want EVERY piece of chicken covered!
(may be prepared ahead of time to this point)
Cook in the oven at 350 degrees UNCOVERED for 1/2 hour to 1 hour (this depends on which chicken pieces you use - check by sticking thickest piece to see if juice runs clear)Serve with bacon on chicken and onions on the side (stir the onions up in the dish before serving)
1/4 cup onions = 4.5 carbs. A green salad is perfect with this dish!
