Ingredients

10 ounce 1 - Package of Yellow Rice/Mahatma Yellow Rice

1 - Medium Onion, Chopped

10-12 ounce can - Chunk Chicken Breast

4 ounces - Sour Cream
-
1 can - Cream of Chicken Soup

1 1/2 cups - Shredded Cheddar
Directions
Preheat oven to 350. Chop onion. Add onion to the dry rice and cook according to the rice package directions.
Combine chicken, sour cream, soup, and cheese.
When rice is done, add to chicken mixture.
Mix well, and pour into a greased 13x9 casserole dish.
Bake uncovered for 30-40 minutes.
Notes
It's for 4-6 servings, but I had plenty left over. Will easily feed 6-8 adults. You can also use pre-cooked chicken tenders, shredded.
