Ingredients
  • 1 2/3 C - Water
  • 4 C - Bread Flour
  • 2 t - Salt
  • 3 T - Sugar
  • 2 T - Nonfat dry milk
  • 3 T - Butter
  • 2 ½ t - Yeast
  • -- -- - Filling:
  • 3 oz. - Pepperoni
  • ½ C - Chopped onion
  • ½ C - Chopped bell pepper
  • ¼ C - Grated Parmesan cheese
  • 1 C - Mozzarella cheese, shredded

From: GoldStar Automatic Breadmaker Instructions & Cooking Guide (model HB-036E, pg. 48). I don't have this bread machine any more, but still use this recipe to make pizza dough. I think I made this as written the first time or two and eventually decided it was a much better dough recipe.
  1. Place ingredients in bread pan in order listed. Put bread pan in bread machine, making sure pan is locked in place. Close lid.
  2. Select #6  (DOUGH CYCLE) on PROGRAM SELECT.
  3. Press Start.
  4. When dough has completed cycle, remove from inner pot and place on greased and floured bread board. Pat dough into two 10-inch rounds. Cover with a towel or loose plastic wrap, and let rise 1 hour or until puffy. Arrange filling in layers, of pepperoni, mozzarella cheese, chopped onion, chopped bell pepper, and grated Parmesan on round, drawing dough up around filling. It is not necessary to cover filling dough.
  5. With a large knife, chop dough and filling five or six times across, then five or six times in the other direction. With the knife and a flat spatula, gently mix the dough and filling by lifting dough and topping ingredients from bottom and piling on top. Repeat chopping process.
  6. With a flat spatula, gently mound mixture on to lightly greased baking sheet, reshaping into a circle and making sure most of the filling touches the dough.
  7. Bake at 350oF for about 30 to 40 minutes or until puffy and golden brown. Remove from oven and let stand 10 minutes before removing from baking sheet.
    Serve warm or cold.

Notes

My notes:

  • Select #6: Dough cycle. The entire cycle, mix/knead takes about 1.5 hours in my machine.
  • Bread preparation: I put the yeast in the bottom of the pan followed by the dry ingredients with the liquid ones (water etc.) on top.
      Option #1
    • Alternate form of Chop, Chop Bread: I started making the dough portion (up to step #4, remove dough...). When the dough cycle was complete, I kneaded it, rolled it out and placed the filling ingredients on it. I then rolled it up (think jelly roll) sealing ends and openings by lightly pinching. Bake as instructed. When it was sliced, I topped the slices with warm or hot tomato sauce. Yumm!Option #2
    • Pizza: I put the yeast in the bottom of the pan followed by the dry ingredients; I use 3 C white flour and 1 C wheat; and adding the water when I begin the cycle. I also add ¼ C Parmesan and ¼ C parsley to the dough. When the dough cycle is complete, I knead it some, roll it out, place it on my pizza stone (a large cookie sheet will do). I then top the dough with sauce, the desired pizza toppings (filling ingredients, if desired), and finally shredded mozzarella. Bake as above.

      Pizza! Our choice of toppings: pepperoni, sausage, peppers, onions, mushrooms, olives, broccoli, meatballs, & broccoli (almost the works)!
