She stated that you could use diet soda and sugar free ketchup. That makes it low carb. Tried it and it was pretty good.

Crock-pot Cola Chicken This cola chicken comes out tasting like barbecued chicken. Cook Time: 7 hours Total Time: 7 hours Ingredients: * 1 whole chicken, about 3 pounds * 1 cup ketchup * 1 large onion, thinly sliced * 1 cup cola, Coke, Pepsi, Dr. Pepper, etc. Preparation: Wash and pat chicken dry. Salt and pepper to taste. Put chicken in Crock Pot with the onions on top. Add cola and ketchup and cook on LOW 6 to 8 hours. If you use diet soda and reduced sugar ketchup, you will reduce the carbs. You can also replace the chicken with other meats or with meatless options (eg tofu or seitan steaks).

This isn't low carb. Catsup and cola have sugar in them.

No offense but this comes up in a search of low-carb recipes and it doesn't appear to be low-carb to me.
