Contry Omelet

  • 6 slices - thick cut bacon, chopped
  • 8 large eggs - lightly beaten
  • 1/8 cup - milk
  • 1 1/2 cups - shredded or diced hash browns, thawed
  • 1/4 cup - chopped chives
  • 1 tablespoon - olive oil
  • - salt and pepper to taste

1)      In a large bowl combine eggs, milk, salt and pepper.  Set aside.  Preheat oven to 350 degrees.   


2)      In a 12 inch oven proof skillet over medium heat, add olive oil and chopped bacon.  cook bacon until partially cooked, and add hashed browns, brown hash browns with bacon until done.  with a slotted spoon remove bacon and hash browns from pan.  Pour most of the grease out of the pan and return to the burner.  Stir eggs and pour into pan.  Sprinkle bacon mixture over eggs. 


3)      put  skillet into oven, and bake for 20 minutes or until done.
