No-Cook Mints

  • 4 3/4 cups - powdered sugar, sifted
  • 1/3 cup - corn syrup
  • 1/4 cup - butter, softened
  • 1 tsp - peppermint extract
  • 1/2 tsp - salt
  • - red and green liquid food coloring

Combine powdered sugar, corn syrup, butter, peppermint extract and salt; mix with spoon and hands until smooth.  Divide into thirds; knead one drop of red food coloring into one third and one drop of green food coloring into another third.  Leave remaining third white.  Shape into small balls; flatten with fork on wax paper-lined baking sheets.  Let dry several hours.
