This is a large textbook and there is a reason. It covers just about every common and uncommon food, by category. Add to that comprehensive descriptions, with some pictures included, of every cooking and baking technique. If you are unfamiliar with how to cook or how to use different foods this book is for you! Be prepared to have a cooking scale on hand as all measurements are done by weight, like professional chefs.
