Open the can of pineapple and using the lid drain off some of the excess juice. Don't squash it down like draining tuna you'll need some of that juice. Dump it into a large mixing bowl. Next put in one of the softened cream cheese and blend with a mixer. When that's blended do the same with the next brick of cream cheese. Don't panic it's going to be soupy. Next add the package of instant pudding and blend that with the mixer. Once you have that together fold in the cool whip. After everything is together, divide it between the pie shells. Let it stand in the frigerator for 1 hour. Garnish with cherries and toasted coconut and serve.
My Mom used to add walnuts in this pie and I have had it with macadamias too. Rum flavoring is a nice addition as well. The sky's the limit. Hope you like it.
