Combine all ingredients - except the chicken & red wine vinegar - in the crockpot. (Note: You can substitute 1/4 cup of red wine instead of red wine vinegar. If so, add it now).
In a skillet, brown both sides of the chicken thighs, and add them to the slow cooker. Toss to coat.
Cook 2.5 to 3.5 hours on HIGH, or 5-8 hours on LOW.
Just before serving, add the red wine vinegar.
Serves 4. About 252 calories per serving.
Delicious & easy!!! I got this recipe from a health magazine (with a few minor changes). You can add sliced cubanella peppers if you choose, or top with parsley before serving.
Serve solo, or over pasta, polenta, or - my personal choice - white rice.
