Eastern Indian Chicken and Lentil Crockpot

Ingredients
  • 2 cups - brown lentils, rinsed and cleaned
  • 1 med - onion, peeled and diced
  • 6 Tablespoons - minced cilantro
  • 12 whole - dried apricots, quartered (about 3 oz.)
  • 1 1/3 cups - raisins
  • 1/2 cup - minced parsley
  • 3 teaspoons - minced fresh ginger (or 2 Tablespoons powdered)
  • 1/2 teaspoon each - ground allspice, cinnamon, cumin
  • - Red cayenne pepper to taste
  • - salt to taste
  • 2 cans - low sodium chicken broth, 15oz.
  • 1 can - water
  • 2 cups - rice: white, brown, basmati, jasmine, etc.
  • 4 cups - water
Directions

In a medium saucepan bring 4 cups of water with the 2 cups rice added to it to a boil. Turn down to medium-high and boil rice until most of the water is absorbed and small holes appear in the cooking rice. Turn burner off and put a tight fitting lid on the rice pan and let sit while the rest of the meal is cooking.

Put remaining ingredients in a LARGE crock pot and cook all day. About 20 minutes before serving, stir the rice into the rest of the dish in the crockpot and add enough water to make it the consistancy that you like, more like a casserole, or more soupy. Serve! 


Notes

This is a great pot luck dish! It is surprisingly delicious! Everyone loves it!

This sounds great, but I'm also wondering about the lack of chicken. I think I'm going to make it with 4 or 5 boneless skinless chicken breasts, then, just before serving, I will shred them or cut them into chunks or something like that. I am guessing that this recipe was supposed to have chicken in it somewhere!

You mention the word "chicken" in title of recipe, but I see no chicken listed in ingredients, only chicken broth. Was this an oversight or does "chicken" just refer to broth?
