I love food, but who does'nt . So I needed to make a dessert really quick (of course I could'nt buy it, which really sucked at the time) So I threw some things together and here's the recipe. So Far nobody has gotten sick, disliked or even poo poohed this so I think that this is a winner.

 

Pumpkin/Chocolate Cheesecake

1 tub of instant cheesecake mix (cream cheese aisle at your store, just for those of us who hate all the work of doing a real cheesecake)

1 29 oz. can of pumpkin puree (since its already cooked you dont have to prep it, you can also use 10 containers of baby food Yam/sweet potato, thats if your really crazy)

1 tsp of cinnamon, nutmeg, and clove

1tbsp of vanilla extract

2 vanilla wafer crusts

1 Box of chocolate pudding mix (you can also use vanilla) I used a sugar free pudding mix but it works fine with regular pudding mix

Fold puree and cheesecake mix together when both are blended ( takes about 5 min. depending on room temp)
pour in dry pudding mix, seasoning and mix with a mixer at med to low speed or briskly hand mix until well blended.
pour into pie shells, dont worry you will most likely have some mix left over. its up to you if you want to toss the leftover, I gave the leftover mix to my toddler and he loved it.

Debbie, am finally going to try this recipe. am going to a pot luck lunch on Wednesday. I wondered if you used instant pudding or regular, or doesn't it matter?

Love this recipe, especially how it came about... Try this... frozen ice cream sandwiches, small pyrex of corning ware...put a layer of the sandwiches..fill to the sides of the container..you can cut the sandwiches in half or whatever...then drizzle with choc or caramel and sprinkle with nuts, or not..then spreadcool whip all over it, be generous, then another layer of snadwiches and cool whip again. I know it sounds yecchy..Freeze and serve the Homemade ice cream cake that people think took you hours to make..It really tastes good.. Good for a party..people really like this and it is sooooooo easy.
