1) Heat the chicken stock in a large saucepan till simmering. Add the garlic, ginger, and soy sauce. Cover and simmer for at least 30 minutes.
2) Fill a second saucepan two-thirds full of water and bring to a boil. Add noodles. Bring back to a boil, then reduce heat and simmer for 4 minutes. Drain and rinse the noodles in cold water.
3)When the stock is done, add the rice wine, fish sauce, green onions, and Bok Choy or spinich. Simmer for 2 minutes, till the greens are wilted.
4) Add the cooked noodles, chicken, cilantro, lemon or lime juice, and more soy sauce if you think it needs it.
