Baked Beans

6 cups navy beans--soak overnight---Boil till tender--

2 lbs. salt pork- cut into squares--1/2 cup sugar--1/2 cup molasses--1 large onion-- 1 tsp. dry mustard

Put all ingredients in bean pot, cover with water, leaving 1 inch from top free for room to boil. Bake 8 hours. in 325 degree oven.   I like to put them in oven when I go to bed and wake up to a heavenly smell.   Great for potlucks and picnics.

 

Barbara Grass's  Punch

4 quarts water--3 cups sugar--1 quart apple juice-  1 pint orange juice-- 2 cans (6 oz.) frozen lemon juice, 2 quarts cranberry juice--1 pint strong tea.

Mix water and sugar, bring to boil.  Combine with rest of ingredients.  Mix well.  Chill before using.  Makes 2 gallons.    40 servings

 

Chinese Sauce

1/2 cup oil--4 Tablespoon sugar-1/2 cup mayonaise--3 Tablespoons dry mustard--1/2 cup catsup

Mix with wire whip.  Add 1/4 cup water.  Let stand 2-3 hours to season.  Great on pork fried rice.

 

Best Divinity

2 cups sugar-1/2 cup light corn syrup-1/2 cup water-1/8 teaspoon salt-2 eggs white- 1 teaspoon vanilla-1 teaspoon powdered sugar.

Mix together in saucepan, sugar, corn syrup, water and salt.  Heat slowly, stirrig until sugar is dissolved, then boil gently without stirring to soft ball stage (234 degrees) meanwhile beat egg whites stiff.  Gradually pour  1/3 of syrup over them, beating constantly .  Continue to cook remaining syrup to hard-ball stage(265 degrees).  Beat this syrup gradally into egg white mxture and beat until mixture will just hold its shape (peaks)  Beat in vanilla and powdered sugar.  Add nuts now if desired.  Either drop from spoon onto waxed paper or put into greased 9x9 pan.  Makes 1 pound

Note..... This will not set up if it is raining out or humidity is high. So make sure the sun is shining.

 

Butter Rum Cake

Stir together---3 cups flour, 1 teaspoon baking powder, 1 teaspoon salt, 1/2 teaspoon baking soda, ( set aside)

Cream together 1 cup butter- 2 cups sugar----Blend in 4 unbeaten eggs one at a time.  Beating well after each. .  Combine 1 cup buttermilk and 2 teaspoons vanilla.  Add this alternately with dry ingredients to creamed mixture begining and ending with dry ingredients.

Blend well, use low speed on electric mixture.

Bake in 10" tube pan, greased on bottom only.  Bake at 325 degrees for 60-65 minutes or until cake springs back at center.  Run spatula along edge of pan and tube.  Prick cake with fork and pour sauce over cake.  Cool before taking cake fromm pan.

Butter Rum Sauce....

1 cup sugar--1/2 cup water--1/2 cup butter

heat until butter melts but do not boil.  Add one tablesoon rum extract when you take off the heat. Pour over the cake.

This a family favorite for the holidays
