Fresh Mango Cobbler

Ingredients
  • 3-5 large - fresh, ripe mangos
  • 1 1/2 cups - sugar - divided into 3/4 cups
  • 1 tsp - cinnamon
  • pinch of - salt
  • 1 cup - all purpose flour
  • 1 rounded tsp - baking powder
  • 1 cup - milk
  • 6 tbsps - melted butter
  • 1/2 tsp - salt
  • 1 tsp - vanilla extract
Directions

Preheat oven to 400 degrees F.

FRUIT BOTTOM:

Peel and slice the mangos.  Put evenly on the bottom of a 9x13 pan.  Sprinkle with 3/4 cup sugar, cinnamon, and a pinch of salt.

COBBLER:

Mix flour, baking powder, milk, sugar, butter, salt and vanilla together until smooth.  Pour over mangos.  Bake at 400 for 10-15 minutes.  Reduce heat to375 and bake for 20-30 minutes, or until golden brown. 


Notes

Super easy and very yummy!

I served it warm with French Vanilla Ice Cream on top.

Make sure you watch during the last 20-30 minutes of baking time, you don't want it to dry up.  Pull out of oven once it is golden brown and a knife comes out clean.
