It has 2004-2007 column excerpts and recipes of local and worldwide dishes as well as some of the favorites from Island Light Cuisine. Carol has tested each recipe and cuts down on the fat the sugar whenever possible without losing the integrity of the original recipes. She uses many different herbs and spices to create interesting flavors. Brown rice syrup, maple syrup, stevia, and agave are substitutes for sugar. She is always on the lookout to find healthy, new ingredients. Whenever possible, she includes variations and tips on ingredients and where to purchase them. Traveling the world has given her an opportunity to try different foods. She is on a constant quest to find delicious, as well as nutritious, foods from all different sources including a few great chefs and restaurant owners, but best of all she likes to talk story with family, friends, and anybody that loves to cook and eat healthy food. To her, it s these people who impact your life the most. Drawing upon this background, she also realized that there were many similarities in the foods.
