In a skillet, melt the butter or margarine. Add the minced garlic and saute until just fragrant. Add the zucchini and the thyme and saute over low heat, stirring frequently, until the zucchini is tender. Remove from heat, stir in the sour cream, and season to taste with salt & pepper.
This recipe is pretty adaptable to your tastes. If you don't have lemon thyme, you can use regular thyme and just a squeeze of lemon juice. Or omit it altogether and put in seasoning of your choice. Olive oil can be used in place of butter.
