1/3C. GREY POUPON DIJON MUSTARD, 2 TBLPS. OLIVE OIL, 1 CLOVE GARLIC, FINELY CHOPPED, 1/2 TSP. DRIED ITALIAN SEASONING, 6-MED. RED-SKINNED POTATOES(2-LBS.), CLEANED  AND CUT INTO CHUNKS. MIX ALL INGREDIENTS EXCEPT POTATOES IN SMALL BOWL, PLACE POTATOES IN GREASED 13X9X2*INCH BAKING PAN, POUR MUSTARD MIXTURE OVER AND TOSS. BAKE @ 425 FOR 35-40  MINUTES OR TILL POTATOES ARE FORK TENDER, STIRRING OCCASIONALLY.
