Hashbrown Casserole

  • 1 bag - Frozen country shredded hashbrowns, thawed
  • 1 can - Cream of Chicken soup
  • 1/2 cup - melted butter or margarine
  • 1 bag - (2 cup sized) shredded cheddar cheese/ 1 cup reserved
  • 1/4 cup - sour cream
  • 1/4 cup - chopped onions

 Combine all the ingredients in large bowl and mix  thoroughly. Pour into glass casserole dish. Top with remaining cheese.

Bake at 350* for 45 mins, covered.  Remove cover/foil and bake 15 mins longer until cheese is bubbling  and melted.



  I have used all low fat or fat free ingredients in this recipe, and my husband, who is a born and raised Southerner, has never noticed the difference!

* Don't  defrost the hashbrowns in the microwave if they are still a bit frozen.  They will turn to mush and you'll end up with cheesy mashed potatoes!!
