Healthy Spicy Broccoli Cashew Salad

  • 3 Cups - Fresh Broccoli Florettes
  • 1/4 Cups - Crushed Cashews
  • 1/4 Cups - Low-Fat Shredded Mild Cheddar
  • 2 Tbsp - Hot Sauce
  • 1/3 Cup - Low-Fat Blue Cheese Dressing (Or Ranch)
  • 2 Dashes - Lime Juice
  • 1/2 Tbsp - Soy Sauce (Optional)
  • 1/2 Tbsp - Ground Cayenne
  • 1/2 Tbsp - Pepper to taste

Combine all ingredients in a bowl and chill.

Shift amounts of ingredients as you find necessary.


Variations: Include Bacon or Sub Cheddar Cheese Shreds for Blue Cheese Crumbles


I have honestly never measured any of these ingredients out as I've made this. I've always simply tasted as I went. If you like it spicier, add more  hot sauce and cayenne.

This is a super refreshing and surprisingly healthy snack for cool summer days when you could use a little bit of kick, but still want something cool to the touch.
