Hearty Italian Lentil Soup

  • Tablespoon 2 - olive oil
  • Clove 4 - garlic, peeled & thinly sliced
  • Cup 1 1/2 - chopped onions
  • Cup 2 - dry lentils
  • Cup 1 1/2 - carrots, chopped
  • Teaspoon 1 - Italian blend herb spice
  • Cup 8 - water
  • Cube 6 - chicken bullion
  • Ounce 14 - canned diced tomatoes with juice

 Saute onion and garlic in olive oil (pure, not extra virgin, is best).

Thoroughly rinse and drain lentils.

Add all ingredients, except tomatoes, to large covered pot and bring to boil. Stir, reduce heat to simmer, cover pot, and cook for 35 minutes or until lentils are tender, stirring periodically.

Then add the tomatoes, liquid and all, bring to boil, then simmer for a few minutes. Adding the tomatoes too soon will prevent the lentils from softening properly.


This is a thick, hearty soup that can be eaten as a main course with a basket of Italian bread or stack of hearty crackers.

I tried this one, with a few low-sodium adjustments. For 1 teaspoon Italian blend herb mix, substitute Mrs. Dash's Original flavor For 8 cups water & 6 cubes chicken bullion, substitute low sodium free-range chicken broth. For 2 cups canned, diced tomatoes with liquid, select a low-sodium brand. Great recipe! Thanks! CatsMeow
