Kale with garlic and cranberries

Ingredients
  • 1/2 can - chicken broth
  • 2-3 tbl - butter (I used smart balance)
  • 1 tbl - minced garlic
  • 1 sm handful - dried cranberries
Directions

1. Tear the kale to remove thick stalks

2. put kale and broth in skillet, simmer about 5 minutes

3. drain and remove kale, set aside. Add butter to skillet, saute on medium with garlic about 1 minute

4. add kale to skillet, along with cranberries

5. cook another 5 minutes or more


Notes

I love this dish. Kale doesn't have the bitterness of other greens, maintains its texture, is cheap at the store, and is a superfood! I usually serve this with salisbury steaks and barley (or mac and cheese on a lazy day).
