Combine all ingredients, cook in crockpot low 5 - 7 hours, or on stovetop, heat to boil, cover, reduce heat & simmer 30 mins, stirring frequently. (I almost always cook it in the crockpot, also add jalapeno peppers to it - depends how spicy you want it.) Then serve in place of meat on tacos, nachos, or taco salad, with all the normal fixin's. ;) For a vegan version, substitute vegetable broth for the chicken. Absolutely awesome recipe, I'm not a vegetarian but I greatly prefer the lentils to ground beef now!! Try it! ;)
