With the advent of shows on television like "Top Chef", I found this an interesting viewpoint from a Master, Noted Chef. I still don't know the tradition serving of a 6 course meal, but this is a wonderful book. If you or someone you know wants to be a chef, this is the book for them. Includes personel recipies also.
