Light Eggnog

  • 1 quart - skim milk
  • 1 cup - fat free egg substitute like egg beaters
  • 6 packets - equal or other sugar substitute
  • 3 Tablespoons - sugar free vanilla instant pudding mix
  • 2-3 teaspoons - vanilla flavoring
  • 1/2 teaspoon - ground nutmeg
  • dash - rum flavoring

Put all ingredients in a blender and whirl for 30-60 seconds until smooth.

1/2 cup serving is 61 calories; .3 grams fat


I love having this over the holidays..I don't feel like I'm deprived on the fun foods..but I surely don't need the fat grams and high sugar of the real stuff...
