Low-Carb Mexi-Chicken

  • 1/2 cup - cheddar cheese (or taco-style)
  • 1 can - enchilada sauce
  • 1 lb - chicken breasts
  • 1 small can - black olives

Spray pan with non-stick spray, add chicken to pan, pour sauce over the top, add drained olives, and sprinkle with 1/2 of the cheese.  Bake for 30 minutes, add rest of the cheese, bake til bubbly and melted.



This is a good entree for kimkins maintenance diet - our family has lost 109 lbs so far since 7/07 on this plan.
