Ingredients
2 Cups - Peanut Butter (crunchy or smooth)
2 1/2 - 3 Cups - Splenda
2 Large - Eggs
2 tsps - Vanilla Extract
1 TBS - Butter
1 Cup - Cream Cheese
1 Cup - Chopped Walnuts
Directions
Preheat Oven to 375 degrees.
Blend all ingredients until smooth.
Form into small balls
Roll in Splenda
Place on ungreased cookie sheet 1" apart
Flatten with fork
Bake for 15 to 20 minutes (depending how crisp you prefer)
Makes about 4 dozen cookies.....approx 3.5 carbs per cookie
Very GOOD!

Great recipe! We have members of our family that are low carb and some gluten free. This covers both!
