1 lb. - butter pound cake
4 oz. can - crushed pineapple
1/2 pint - whipped cream
to taste - sugar
- sliced strawberries
This is so simple... but oh so good!!
Crumble the pound cake into mixing bowl
add pineapple (do not drain juice)
whip heavy whipping cream into soft peaks
add sugar (to taste) to whipped cream
**save some whipped cream for garnish**
add whipped cream to cake and pineapple; fold in gently to create a "chunky" pudding like consistency
the best and prettiest way to serve this is to use tall parfait glasses. Into each glass place a heaping tbsp of pudding mixture, a few sliced straberries, then continue layering. Top with a nice dollop of whipped cream and a straberry slice. Keep chilled until serving. this is a really elegant looking dessert and absolutely delicious!
