Ingredients

3 - egg yolks

1 - whole egg

2 cups - flour

1 tsp - salt

1/3 cup - water

1/4 tsp - salt, added later when cooking
Directions
Put the flour in a bowl. Make a well in the center of the flour. Add egg yolks, salt, and whole egg in center. Add a little water at a time, working it in until dough is stiff, but easy to roll. Divide dough into smaller sections. Roll out on a floured board or table to as thin as you want them. We like them pretty thin. (They'll plump when they cook.) When all sections are rolled out thin, cut with a pizza cutter to make strips like noodles. Let them dry about 2 or more hours. When ready to cook, heat about 3 quarts of water to a rolling boil. Add salt and dried noodles, a few at a time to the boiling water. Stir good occasionally. Cook until tender. Taste one to make sure they are done. (That's my favorite part!) Flour will thicken sauce around noodles. No need to drain. These are always a hit at family dinners.
