Meatless Mexican Casserole

  • 2 Cups - cooked white rice
  • 2 Cups - shredded cheddar cheese
  • 1 Can - pinto beans
  • 1/2 or more to taste - chili powder
  • 2 eggs - scrambled
  • 1 1/2 Cup - salsa
  • - salt & pepper to taste

Use rice to the consistency you desire.  I added it last, a little at a time.  Mix salsa, eggs, chili powder, pinto beans, 1 cup cheese and rice.  Season with salt and pepper as desired.  Pour into greased 8x8 pan.  Cover with remaining cheese and bake at 350 for 20-30 minutes until heated through and cheese is melted.

Serve with sour cream, tortillas or tortilla chips, or any other mexican style side.

I really liked this one too. It reminded me of the inside of a bean burrito. So good!
